Pan Fried Spaghetti Omelette - Carbonara style

It is neither the first course of spaghetti nor a classic omelet to serve as a second course, it is a unique dish to lick your fingers and taste strictly in slices: the spaghetti omelet! Just writing this makes my mouth water. This spaghetti omelet makes as a robust dish to share at midday or to use the pasta left over the night before. This version includes the addition of scamorza and smoked bacon, but there are those who only add parmesan to the base of spaghetti with tomato sauce.


Spaghetti 350g, 12oz
Eggs 5
Whole milk 100ml, 1/2cup
Parmezane cheese – grated 50g, 2oz
Smoked scamorza 100g, 4oz
Smoked bacon 50g, 2oz
Thyme 1 sprig
Black pepper a pinch
Extra virgin olive oil
Garlic 1 clove

To make the spaghetti omelet, first of all, place a pan full of salted water on the heat and bring to the boil, it will be used for cooking the pasta. Meanwhile, take care of the filling: cut the smoked bacon and the smoked cheese into cubes. As soon as the water starts boiling, add the spaghetti and cook al dente.

Pour the eggs into a large bowl, add the peeled thyme and the milk, then add salt and pepper to taste. At this point season with the grated cheese and mix well to obtain a homogeneous mixture. Stir in the filling and mix again. As soon as the pasta is cooked, drain it in a bowl and season with a little olive oil. Add the pasta to the filling 11 and stir again to mix. Take a non-stick pan. Sauté the oil with a clove of garlic. Remove the clove of garlic and pour the spaghetti.

Distribute them evenly with a spatula, then cook over high heat for 1 minute so as to firm up the base, then lower the heat, cover with the lid and cook for 15 minutes.

The time has come to turn the omelet: shake the pan to make sure it is detached from the bottom, place a pan of the diameter of your pan on the omelet, turn the pan upside down and cook for another 5 minutes without a lid. The omelet is ready, enjoy it while warm!

You can keep your spaghetti omelet in the refrigerator for up to 2 days.

In the spaghetti omelet, as in any omelet, the ingredients can be imaginatively substituted according to taste: you could opt for cooked ham or raw instead of bacon, or replace smoked provola with mozzarella, Emmentaler, Gruyere or cheddar. You can also prepare the omelet with leftover spaghetti and season the omelet to taste.
